Phi aged on red wine barrels (Margaux, Pomerol or St-Emilion), macerated on Quince. Fermented with our own wild house yeast strain 'Morpheus'.

A 750ml bottle, poured into a Tilquin stemmed glass.
Appearance: A hazy copper amber orange colour, with an almost one finger white head that had pretty good retention, and left some nice lacing.
Aroma: Dried cherry, pear, pear skin, wood, with notes of apple.
Taste: Sweet and sour, tart, cherry, pear, apple, apple cider vinegar.
Mouthfeel: Medium bodied with soft carbonation.
Overall: The sweet, sour and acidity balance each other out well, and it drinks nicely.

Small sample from bottle, shared at Bor's. Pours a cloudy golden-pinkish colour with no head. Aroma's: sour, vinegar, quite sharp, but also sweet fruit, actually quite raspberry-like. Flavour is sharp vinegar-y sour, but quite sweet at the same time. Medium bodied. If there hadn't been any sweetness it would have been undrinkably sour, so that saves it. Not very balanced though.

-tangerine tap pour with a bit of haze and a thin cap which dissipates quickly. The aroma is earthy with a a sharp fruit-acid tang. The flavors is complex. Sour citrus and stone-fruit blend with a distinctly vinous-oak back. A moderate+ bitterness is present. The mouthfeel and finish are a bit thin. I very much appreciate and enjoyed the brew. Those on the wine-beer flavor boundary are special.

Poured an orange body with minimal head and little lace. Aroma and taste strike me as sweet, thick, notes of dark fruits like raisins yet a white wine carbonation/sharpness and sweetness and some malts that give it oomph. Finishes easy and not so sour and it's enjoyable.

quince fruit edition, really impressive stuff, on tap over at bull and bush, who continues to have some of the most esoteric and relevant guest taps anywhere in denver! stoked to see this one, didnt even know they did one with quince! im not super familiar with the fruit, but i am familiar with this base beer, and what the fruit adds is awesome, notes of green pear and tangy citrus and white wine, very complex, not overly fruity in the classic sense, but its integration into this beer has yielded a vastly different and more complex final product. there is a cool citrus astringency to this that really goes nicely with the bacterial vinegar sourness of the base beer, and it seems to bring out even more oak tannins in this too. a little more acidity in this version than the base as well. still layered with wood and funk, still heaps of wine notes to this, brandy even, and a dried grassy herbal quality too, oak and acid in the finish, the fruit comes out more late, really tangy and mouthwatering, and the beer has a lot of body for how sour it is, not broken down as much as a lot of these are. really tasty and different beer here, one of my favorite variants of this one so far! i have not seen this one in a bottle at all either, so get to the bull and bush for this before its all gone!

Had on tap. Pours hazy, dark orange-brown in color with 1/4 inch head. Taste is vinegar, honey, and stone fruit. medium bodied, sour, with moderate carbonation. Makes for another tasty beer from Alvinne. I prefer some of their other beers, but this is well worth a try.
