Czech Style NY Pale Lager - When Andrea Stanley of @valleymalt notified us that they were releasing an undermodified pilsner malt - Jalowetz Pilsner - using a 1920 Czech barley malt recipe with NYS barley from @mosher.farms in Bouckville, NY we jumped at the opportunity to brew up a Czech-Style Pale Lager.
Utilizing a triple decoction mash regimen (boiling a portion of the mash 3x throughout the brewing process), we were able to break down the complex protein and sugars, whilst building a ton of malt complexity and emphasizing drinkability. We generously added NY grown Willamette hops (courtesy of @hopguild) for a nice spicy, herbal and floral character to counteract the sweetness
