This beer/wine hybrid is inspired by the technique used by some natural wine makers, “Pied de Cuve”.
We got Cabernet Sauvignon and Merlot grapes from Central Valley, California. After being destemmed and crushed we allowed them to begin native fermentation. Once the grapes began fermentation, we brewed a simple low gravity wort (unfermented beer) and added it to the fermenting grapes, allowing the already fermenting grapes to also ferment the wort together. Once fermentation was finished, we racked to neutral oak barrels and allowed it to mature for 5 months. No sulfites, nor yeast were added at any point.

Semi-opaque red/purple appearance.
A slow pour yielded a minimal khaki head; almost no lace.
Red grape, farmhouse funk & faint oak notes in the nose.
Medium mouthfeel.
Red grape & mild black pepper flavors up front; some merlot notes & a touch of oak on the finish.
Balanced, interesting and one I hope they make an annual event. I'd have another!

Saturated bright crimson tone, slightly purplish red foam from the grapes. Spotty lace and broken skim after a couple sips.
Juicy fruit and funk in the aroma, cherry and raspberry meets wet pasture, a vague hint of dried herbs and minerals.
Soft supple feel, vinous dark forest berry fruits. Black cherry, black raspberry, wet stone, light Brett in the background. Really fruit forward and rustic, I like it a lot. Carb is fairly low, but it amplifies the natty red vibe even more. Great first impression from these guys.
