A rich, barrel-aged imperial stout built for decadence. Our beloved Dark Bloom spent two years in Four Roses bourbon barrels before being conditioned on heaps of pistachio and Madagascar vanilla beans, drawing out deep notes of dark chocolate, caramelized sugar, and toasted oak. The pistachio adds a subtle nutty roundness while vanilla smooths everything into a velvety finish, wrapped in warming bourbon character.

This one pours a fairly dark black color, with a small head, and not much lacing.
This smells delightfully fudgy, with some sweet pistachio, vanilla, and coffee.
I wish pistachio was used in more pastry stouts – it’s a flavor that works well and doesn’t overwhelm with sweetness. This sort of tastes like pistachio cream, if that’s even a thing. It’s densely fudgy, just packed with chocolate flavor. There’s a nice oakiness on the finish, with some light caramelly bourbon.
This is medium bodied, creamy and rich, but not super thick, which is just fine. It’s not very boozy tasting for how strong it is.
I’ve really enjoyed all of the beers that I’ve had in this series.
