Pivovar

This is a fairly newly renovated building in downtown Waco, walking distance from the famous Magnolia Silos that apparently attract tourists from far and wide. (Don't ask me, I don't watch home renovation shows!) It consists of a large restaurant and bar on the ground floor that includes an attractive production brewery, and European-style hotel on the floors above. Apparently the hotel even offers a beer spa treatment. The restaurant is open and airy, with nice wood and brass construction. It feels very upscale and is a bit surprising for a relatively small Texas city like this. The food menu was Czech-themed and very good. The service was professional and the meal experience was very good overall.

Pivovar brews and serves exactly four beers, all Czech-style lagers from very light to dark. I sampled all of them while eating my meal and found them all to be authentic and very well made. It is amazing what this brewer is producing in what is otherwise only a fledgling beer culture in Waco. the whole experience, the setting, the food and the beer, was top notch and I will be back when I'm in town in the future.

I only had the European Dark Lager and it was damn tasty. Typical over priced hotel bar atmosphere, awesome if you are into that. Food looks good and expensive so I decided to go to In-N-Out later instead.

This unique establishment is a luxury hotel plus restaurant plus authentic Czech brewery. They have an interesting European-industrial aesthetic on the first floor restaurant and bar area which showcases some of the brewing fermenters and other brewing equipment. The also have a massive biergarten which host live music on the weekends. The beer is authentic and high quality and the food is delicious. Definitely give it a try!
