Let me walk among the fruit cellars of the farmers barn and soak in that heady must. It is lively and bright, earthy and mellow, a perfume of cherries aged like grace.
Process & tasting notes: Cherries Aged Like Grace is a saison aged in wine barrels and refermented on Montmorency sour cherries from the Twenty Mile Bench appellation of the Niagara region. This beer is a combination of mature spelt and buckwheat saison, brewed with a variety of French hops, and our mixed-fermentation cellar culture.
This saison reminds us of the aroma in an old fruit barn that has stood for generations during the harvest. The thick wood beams and earthen floor exude soft vanilla, aged spices and bloomy rind, with the perfumed nose of fresh-picked cherries.
To faithfully render that experience is our goal of Cherries Aged Like Grace, and our hope is to transport you to that time and place. We hope you enjoy this beer, in laughter and in stillness.
Serving suggestions: We prefer to decant off the yeast. Enjoy in a white wine glass.

At Gastropub on Erie Street East in nearby downtown Windsor. Chilled and on tap, 4oz in a flight of four beers. My first beer from the Dundas, Ontario brewery.

Tart cherry featured with dry brett and mixed fermentation backing. Very nice by itself or with food.good drinker, on tap at the source. Colour and good mixed ferment.
