Aged Saison on Raspberries
How sweet the barbed harvest, thorny barbs cross our skin, and trade blood for sweet ichor, signed gladly in red, the raspberry pact.
Process & tasting notes: The Raspberry Pact (2022) is the second vintage of our aged Saison on raspberries. This vintage was made with the same Hipple Farm Nova Raspberries as the 2021 vintage, but with a small addition of locally grown, organic blackberries. The result is a deep, velvet-red raspberry colour and flavour, with luxuriously soft tannins and gentle funk.
The Raspberry Pact (2022) has a tart but restrained acidity, and a bone-dry finish.
We are happy to have preserved such beautiful fruit in this form, and hope you will enjoy this beer as much as we do in laughter and in stillness.
Serving suggestions: Enjoy in a white wine glass.

At Gastropub on Erie Street East in nearby downtown Windsor. Chilled and on tap, 4oz in a flight of four beers. My third beer from the Dundas, Ontario brewery.

reddish colour. Clean execution. very dry, like a fruit wine. Bottle pour at the source. Prototype to build the eastern counterpart of blind enthusiasm.
