Bean Dreams is a barrel-aged imperial stout produced from a blend of coconut rum and bourbon barrels. After being aged for 12 months, these barrels were rested on cacao nibs and a whole half-pound of vanilla beans per barrel!
We used a blend of vanilla beans including Ugandan, Sumatran and Madagascar to amplify the already present vanillin character taken up from aging in the barrel. This blend of vanilla presents in a full scale of flavor and aroma from deep earthy and woody undertones of dark chocolate and caramelized sugar to creamy floral, fruity and perfume notes.
These flavors and more are added to the symphony of charred oak, bourbon, subtle coconut and sweet rum to create an unforgettably smooth and complex Imperial stout.
