Way back in 2013, then graduate student Daniel Sharp, presented a Masters Thesis to Dr. Thomas Shellhammer at OSU regarding oil changes in Cascade and Willamette Hops during maturation. What he found was a boost in oil the longer the Cascade was allowed to remain on the bine. Dr. Daniel Sharp is now the Brewmaster at Ninkasi. Last year, Blake Crosby, intrigued by this and much more research, decided to leave one single lot of Cascade to hang into October. As someone who is intimately familiar with traditional Cascade, I wouldn't have believed you if you told me the resultant hop was the same variety. Huge tropical citrus aromas leapt out of the rub, and there was something reminiscent of the Southern Hemisphere about it. Cheers!⁠

Pours like a glass of sunshine with pillowy white foam. Aromas of mandarin, cherry and cannabis rise before flavors of yellow peach, watermelon and pine. Finishes with a grapefruity snap and a touch of lingering resin.
