A spontaneously fermented beer with freshly foraged birch sap and spruce tips aged in oak barrels for 14 months. Bottle conditioned with local honey for that lovely effervescence. This beer represents the times of the slow, gradual decline of winter and the promise of the new upcoming season. Homage to those first few weeks of March that feel like winter, but mother nature is truly awakening and giving life to everything around us. She also did give life to this little beer by the magical power of the living nectar that is rushing in the veins of those graceful birch trees.

poured from a 0.75L bottle into a SP lambic glass. pours a very pale, slightly cloudy yellow with a finger of quick-to-fade foam head. light pine and spruce on the nose along with some light acidity and oak. as this warms to room temperature it becomes insanely smooth, well balanced between flavors and much less sour. flavor follows the nose with it becoming increasingly more enjoyable as it warms and opens up. there’s even hints of lemon and hay. medium-full mouthfeel with a lambic-like level of carbonation. this was really kind of meh out of the fridge but eith time and warming up it was really quite stellar.
