my first from these guys, at least the third brewery to occupy this downtown bozeman location now, but easily the best so far. this won a bronze at gabf and i can see why, true to style, gorgeously crafted and balanced, and fresh as they come, really nice beer, even with some uniqueness in terms of how and where the hops kick in, really highly refined, i thought this was fantastic, a killer first impression. neat slow pour vibes to this, high wispy head and stunning clarity and shine, bubbly and minimal and sexy, yum. it smells and tastes noble hoppy, but more grassy and sweet than spicy and bitter to me, faint lime, minerals, lemongrass, and green tea, all quite delicate but still obvious. the grain is fresh, earthy, and crackling dry in here, not overly european to me, lighter than most, but it works with the prominent lager yeast in here, which seems very patient, a little doughy, also fresh, and its crazy how dry and fast finishing this is overall, rushing carbonation. there is a lovely brightness and lightness to this, but its also more flavorful than most, without being more malty in any way, impressive quality, awesome texture, and frankly probably among the best beers to ever be made on this equipment. not sure why others in this location have not worked, but these guys should do real well. the beer was dope and the food was even better, truly incredible eats in here. i hope they kill it! this is fire, reminds me of bierstadt, high praise indeed...
