In the recesses of our brewery lies the Sour Patch, where we cultivate our “Wooden...it be nice!” series; a brewer’s playground for experimenting with wild yeasts, barrel aging & infusion of culinary ingredients. And from this experimentations comes ... Solera No. 2, the 12th release in the series! Solera No. 2 is a wild golden ale that was barrel-aged on French Oak barrels for 1 year!

Extremely reminiscent of wine; on its own it is very complex and difficult to grasp. Perhaps a seasoned Wild Ale fan could guzzle it, but not me. But paired with the correct food (such as a creamy pasta dish), it is much more palatable and the two build each other up.
Specifically on its own I find the wild yeast sour element to completely overpower the oak, but it comes out nicely when paired. Feels more like wine on the palette too.

Pours a clear golden color. A moderate head quickly dissipates. Looks like a white wine.
The aroma opens funky, rustic and woodsy with fruity notes of grape must, lemon and peach. Very oaky with vinous aromas, and floral spices that evoke notes of strawberry and raspberry. Aromas of sourdough bread and wheat. Overall, you can smell the sour a mile away.
The taste is sour and dry, with fruity and tart notes of lemon, lime, peach and white grape. A bready malt and doughy wheat base evokes notes of sourdough. Lots of woodsy and oaky character blends well with floral and funky spices.
Medium bodied with a very acidic mouthfeel and bone dry finish. The carbonation is moderate.
A sour that pulls no punches with intensity and complex characteristics. Not for everyone but definitely for me.

O- Like Solera No. 1 this is really sour but this bring out more oakiness and it really works for it.
