We’ve been aging our iconic imperial IPA in various barrels for years. Last year we got out hands on some 12-yr Weller Bourbon barrels and we knew what had to be done. After a year resting in the wood the profile is softer, richer and bursting with notes of toffee, maple, fruit leather and orange marmalade. This is one to savor and contemplate.

Had this on October 2, 2022 with Knapp85 and found my notes. Poured from a Crowler that was purchased at the brewery.
A - Dark caramel amber color with dense off-white lacing.
S - Apple, caramel, brown sugar, and Whisky.
T - Whisky, brown sugar, toasted caramel, and ends on the boozy sweeter side.
M - Light syrupy texture leaves of thin film of sugar on the lips, warming on the way down the throat, and lots of dryness on the back of the tongue.
O - This is pretty fantastic and adds a nice nuance to an already big, boozy beer.
