We brewed this Fall- centric strong ale in collaboration with our friends at Dewey Beer Co. and Fifer Orchards. Taking inspiration from a classic American dessert, the maple apple crisp, we created a reduction of Fifer Orchards apple cider to concentrate the flavors and create caramelized notes. To add some pie crust flavors, we baked a portion of the mash until it was golden brown and toasty then added it back to the brew. Finally, to bring all the dessert-goodness, we added classic warm spices and sweet Madagascar vanilla beans. The result is a big & bold copper ale just bursting with fresh-from-the-oven Fall goodness.

On tap at Dogfish Head Taproom and Kitchen in Milton, DE.
This one pours a dark reddish brown, with a small head, and lots of lacing.
This smells like caramelized sugar, pie crust, vanilla, toffee, breadiness, maple, and spiced cider.
This definitely evokes exactly what it’s supposed to do here – a maple apple crisp. It’s definitely going to be sweet, and perhaps one pour is just enough of it. But, the sweetness is never really cloying, and it’s decadence is what makes it pretty tasty here.
It’s not very boozy at all, despite the strength, with a nice creaminess and good drinkability.
This was definitely fun, and really helped to evoke those fall feelings.
