Nicolo and Ragged Jordan are back at it again with the second installment of our Province Ale Company beer project. This recipe called for the use of pale malts, 25% malted rye in the mash, baking powder, candied aged hops, and wild grown sage that had been hand-picked and dried.

Had on tap at DFH. Review from notes.
A: Poured a very hazy peach color with a small white head that had decent retention. Minimal lacing.
S: A little bit of grainy malt, like spice and a little bit of what I presumed was the sage, not really obvious though.
T: Sage was more forward with a little bit of light fruity hops, a little grass as well.
M: Medium bodied with moderate carbonation.
T: Wasn't a huge fan, one and done.

First had: on tap at DFH, Rehoboth
My wife liked this one, but I didn't really care for it much. Poured a cloudy light amber color with a small layer of white bubbles on top that retained as a ringlet. Aroma of toasted grains, light spice, and sweaty feet. Taste was similar, with the sage coming out a bit more, complimenting the pale malts and herbal hops. Light body, and a bit too uncomfortable for me overall. Another interesting vintage recipe, but nothing that I'd want more than of a sampler of.
