Description: Collaboration with Lost Shoe and Time & Materials. The base Belgian strong ale was fermented cleanly in stainless, then rested for nine months with our resident cultures in second use Gin barrels, and refermented on peaches with Ceylon cinnamon. The resulting drink is one of sophistication, driven by warmth and light acidity. A gentle cask heat backed by notes of woody spice transitions to peach flesh and soft botanicals. This beer is a beautiful counterpoint to the second volume’s bright pineapple and vanilla, offering a rich seasonal dichotomy perfect for cold winter days.
