This beer is fashioned after the Belgian wit, or white, beers so named for the protein haze that comes from using unmalted wheat. Another common trait with the Belgian wit style is the use of honey, oatmeal, sweet and bitter orange peels and ground coriander in the kettle. The honey provides a floral aroma that varies with each batch due to the changes in the honey from season to season. The coriander and the orange peels give a spicy, citrusy flavor and aroma. The oatmeal adds a silky smooth texture. It is gently hopped with Simcoe and Mt Hood hops to a bitterness of 16 IBUs. (O.G. - 13P/1052.)

A-Cloudy light golden yellow with a bright white head leaving spotty lace.

S-Sharp citrus and spice dominate with an underlying breadiness.

T-Made with 2 types of orange peel, coriander, Kansas honey and a sprinkling of oats in unmalted wheat this brew had plenty of spiciness and bitter zest bite. Honey added nice smoothness and the oats helped beef up the body.

M-Medium-light body with plenty of zip and a nice crispness.

D-This was about the perfect brew to start with here at Free State considering it was over 100 F outside! The combo of the honey, oats and spices made it very enjoyable on this very hot day!
