This beer starts out a lot like the John Brown Ale. Lots of malt and gentle hopping make a brew balanced towards the subtle nuances of rich malt flavors. After this beer has matured, it is put it into conditioning tanks with 3/4 of a pound of gourmet chocolate nibs per barrel. These are the roasted cocoa beans themselves, which provide the very essence of chocolate. The result is a subtle dark chocolate aroma and a mild chocolate flavor that complements the rich malt character of the beer. (O.G. - 13.8P/1055. Hops - 16 IBUs)
