pretty epic little spontaneous beer here, funky as can be, woody and mature, light to drink though, effervescent from the tap, and made with apples, honey, and chamomile, which is so cool and uncommon, im really into apples in beer right now, and the fruitiness of this is amazing. blonde and with just a light haze to it, still a low glow, and over an inch of tightly packed and lasting head, fills the glass really well. the nose on this is like white wine, the apples bring skinny tang and some fleshy sweetness, i get yellow florals along with it, the chamomile does a green tea thing, the honey is floral too, smells sweet but the beer is somehow quite dry overall, awesome beachwood funk profile to this, plenty of oak, a light saison type spice, a belgian ester among the apple and oak, brett driven though on the ferment, decent acidity not out of place. the flavor is surprisingly honey forward, its delicate but easy to place all though this, delicious and distinctive, really a cool element. the chamomile is botanical and interesting, adds some bitterness but also an almost culinary herb thing, medicinal for a second with the acid in here, and the apples of course make this at times apple juice, at other times wild funky hard cider, and at other times just bring a crisp apple bite, very natural, amazing with the honey but also with the yeasts. sour but not insanely so, maxed out on the funk side to an almost lambic extent, nice oak character the whole way, and this is both sturdy and delicate at the same time with some wheaty type body but also wonderful carbonation, super uplifting. really complex and super good, one of the best beers ive had so far this year, absolutely loved the apples and honey and chamomile all coming together in here, this is elite, beachwood at their best!
edit: probably should have added this under the blendery listing, but i still dont see it their either, its still one company right? anyway, got the esteemed privilege of having this from the bottle, a large format, well over a year after the above review here in the fall of 2025, really epic carbonation and sparkling effervescence in this format, drier now that i remember, more subtle on the honey, still botanical but i get a lot of apple snap, cider character, and oaken funk, champagne character to this, wonderfully mature but also really delicate and refined, such a cool showcase of the apples, which came from new york state. a killer beer to share with new friends, what a treat! this is about as good as it gets.
