Brewed w/ pilsner malt, Ontario flaked/raw wheat, aged in stainless steel w/ Ontario Damson plums for 3 months. Plum beer ratio: 203g/L
Using a '1-minute mash' by David Janssen--you make a beer w/ a broader spectrum of unfermentable sugars (similar to effects of turbid mashing) to leave a bit of body behind @ end of fermentation. Primarily fermented w/ our house clean ale yeast but picked up lots of acidity during it’s time on the fruit (on which there must have been some mean lactobacilli).
It’s (real freakin’) sour and has a beautifully floral, deep blue stone fruit aroma. Low carbonation, but high acidity. Palette is slightly saline, tastes of fresh olives, candied vine plum, lemony lemon.
Conditioned 5 months.
