I let this beer age far too long and was surprised to find it still tasted so good!!!! Big bottle with a cork and a cap. Poured a hazy straw yellow color, Huge foamy white head....with the first pour, the head filled the entire glass. Good head retention and thick foamy lacing. Subsequent pours (slow and down the side of the glass) resulted in a smaller head but still full and with good retention. The aroma and flavor featured a huge floral presence and a lot of funky Saison-like yeast. I would almost call this a Saison if I was the first reviewer. The floral presence is strong and pleasant too. Funk and light perfume....nice!!! The taste include fruitiness: apples and white grapes. This is a very good beer!!! Mouthfeel is light and nicely carbonated The funk and floral aspects play out well on the tongue. I would like to see this beer in a rotation!!!!

-clear, pale amber bottle pour, aged three years. The initial pour provides a generous foam pile. The aroma is strong with oak, wild ale yeast and hay funk. The flavor is full, but delicate with grassy and floral notes. There is some apple and vinous taste. The oak essence is a superb backer. This is an immensely enjoyable pour. I had it in the Ithaca Taproom a year ago and am pleased to be able to enjoy it again.
