A - Pitch black pour with thin caramel lacing and no carbonation.
S - Chocolate and chocolate char
T - Char, oak, Bourbon, cognac, and ends on the boozier side.
M - Big, thick, and silky with warming in the back of the throat.

Bottled on 11/9/2023. Poured into a pub glass at 59°. The color is nearly black and it sports a fizzy, medium-mocha head that dissipated rapidly and thin film of lacing. The nose is boozy with whiffs of bourbon and cognac, as well as dark chocolate, freshly-brewed coffee, caramel, and a hint of dark fruit. The chocolate and caramel are much stronger in the initial taste and provide some sweetness to balance the barrel influence. Even at 6 months, the bourbon and cognac are strong and there is a pronounced sour mash. There are also subtle notes of raisin and perhaps fig. It has excellent depth of flavor. The mouth feel is a bit thin for such a big Stout and it is potent for the 12% ABV. Overall, this variant of Gmork is very well-crafted and flavorful although I think I prefer the single barrel-aged variant. I recommend letting it breathe in the glass as the booziness mellows considerably.

Pours black, with thin tan head that fades. Aroma of dark chocolate, vanilla, oak, and dark fruits. Taste is similar, a little boozy and the vinous flavors from the cognac come through a bit seemingly moreso than the bourbon. Full bodied and smooth, but not as viscous as some stouts of this strength.
