Ghost Marius 2025 - 6% Mixed Culture Barrel Aged Fruited Saison. This batch of Ghost Marius began life as a Saison brewed with @DeerCreekMalt barley and noble hops, and fermented with our Foraged Yeast Culture. After resting in barrels with our mixed culture, it was transferred onto the spent cherries from this year’s batch of Marius and lots of fresh peaches from Three Springs Fruit Farm. After conditioning on the fruits it was refermented in the bottle/keg for its final round of fermentation to develop that lovely carbonation.
Ghost Marius presently has notes of wild barnyardy brettanomyces, creamy lush peaches, some of that almondy cherry pit character, Zebra-style chewing gum, chamomile, wild spring honey, and a zippy tartness that will put some pep in your step and a smile on your face.
