First Light - 5.1% British-Style Pub Lager; Collaboration with Wild Fern Brewing. This is a really fun collab we did with Julie and Derek of Wild Fern over in Frenchtown, NJ. “What the heck is a British-Style Pub Lager?” you ask. Well, it might mean different things to different people. But for us, we took a jumping off point from the malt bill for Moss, Wild Fern’s lovely British Mild. We subbed in some British Pale Lager malt, layered some Biscuit and Crystal malts; and hopped it with a solid dose of East Kent Goldings. Whereas all our British pub beers are fermented with a fruity ale yeast giving apple and pear notes, here we used our German lager yeast, fermenting it slow and cold for a nice dry doughy crispness. The result is a crushable little lager, with the bread-like toasty malt character and the herbal citrus hop note of a British pubber, and the clean dry elegance of a nice Vienna Lager.

On draft at the F&M pub in pint glass

Dark rust color, clear, with cream colored head. Bready and mildly toasty aroma and flavor. Well balanced, clean finish. Thin to medium bodied.
