From our wild cellar comes this blend of Belgian style Dubbels from 2nd use rum barrels and strong ale from brandy and 2nd use bourbon barrels. All of these beers underwent an extended lactic fermentation in barrels for 11-28 months. Akin to an Oud Bruin, the final blend is balanced with gentle acidity and supporting malt character. Implementing the use of 2nd run barrels allowed us to control the oak and spirit character to a supporting role. Giving Thanks is a wonderfully complex beer with notes of nuts, tobacco, plum and oak with supporting acidity.

500 mL bottle poured into a snifter.

Appearance - Murky deep brown. Small khaki head and thin collar.

Smell - All over the place. Brandy. Rum. Oak. Bourbon and vanilla. Some brown sugar. Doesn't smell like a sour until it warms just a bit, and then you get some acidity and funk.

Taste - Sour up front. Lots of vanilla. Oak. Brandy and rum in equal quantities. Some dark fruit sour flavors. Oak dominates the back end. Boozy.

Mouthfeel - Medium low carbonation. Medium heavy body. Boozy. Medium sourness.

Overall - It's a sipper of a sour. Heavy sugar and barrel content diminishes the sourness, but it also makes it a little rough.

Thanks again to Sean for more block 15! Enjoyed from a block 15 snifter.

Brew pours a deep muddy mushy brown with a reasonable fizzy cap that didn't hang out and left a few specs of lace.

Nose is a medley of various spirit barrels fighting for dominance over a spicy olde ale strong ale type of vibe. There is a lot going on here. The booze is sharp and a bit all over the place. Complex but muddy.

Taste is quite nice and extremely complex. Again a medley of barrels show themselves. They don't clash but aren't the perfect compliment for themselves either. I definitely appreciate the experimentation and the end product, although tasty feels like it needs to be refined a bit more. Not boozy in the feel but I can taste all the booze from the smattering of barrels used. Cool beer, but nothing to chase down. Paired extremely well with some French onion soup that I made while drinking this.
