Each year we mature Super Nebula—an imperial version of our Nebula stout—in unique bourbon barrels, followed by conditioning on cocoa nibs selected to complement that year’s blend. 2021 Super Nebula was matured in Basil Hayden bourbon barrels and then conditioned on direct trade wild harvest heirloom cocoa nibs from Bolivia. This special variation of Super Nebula was matured in Basil Hayden bourbon barrels and conditioned on direct trade wild heirloom cocoa nibs, maple, and freshly roasted “Flame On” coffee beans, our collaboration roast with Bespoken Coffee Roasters

Pours an opaque, pitch-black coloration with a large, mocha-colored, foamy head. Smells of roasted, caramel malt, chocolate, coffee and bourbon, as well as hints of licorice, maple syrup and oak. Taste is an excellent balance of roasted, caramel malt and strong chocolate, coffee and bourbon notes, as well as lighter maple syrup, licorice, vanilla and tobacco, with hints of brown sugar, dark fruit and oak as well. Finishes quite roasty, with a medium sweetness, light bitterness and some chocolate, coffee, vanilla and bourbon lingering in the aftertaste. Full mouthfeel with a rich body and light carbonation.
This makes for a very rich BBA stout that is almost equally heavy on the chocolate, coffee and bourbon, without any of these notes feeling overwhelming or heavily boozy though, while still leaving room for some licorice. vanilla, tobacco, maple and hints of dark fruit shining through. I really like the balance of sweet and roasted notes here, with the caramel and maple sweetness being kept in check very nicely by some distinct roasted malt and coffee. There really is quite a lovely coffee presence left in this after 6 months, while the booziness has mellowed out a bit, with a very nice bourbon presence that never feels overly boozy though.
