Pours a murky light brown. Like a light barley wine, not too nice looking, quite a bit of thin sediment as well. Very thin and champagne like bubbles, unsurprisingly since t fermented with champagne yeast.

Smell evolves a lot. From cold it's botanical and citrus sour, then as it warms, the sour citrus fades, botanical becomes more prominent and malts come into play.

Taste evolves the same way, initially worried it would be sour, but it isn't. Very complex beer. End result feels like a herbal, botanical, and citrusy quad.

Feel is tad sweet, but light with carbonation.

Interesting beer, maybe I need to have more gin and tonics, but this still feels like it emulates it a bit. Maybe having it with paler malt would let the adjuncts and hops come through more.
