We brewed this beer out of the desire to highlight a very special hop that originated from a Japanese breeding program in 1984: Sorachi Ace. We think of this as a Japanese Red Ale. (Yes we made that up.)

The beer pours a deep copper color with ruby red highlights capped by an off-white foam that leaves solid lacing behind in the glass. The aroma delivers a balance between zesty lemongrass and an earthy cedarwood top note that blend together over a base of ripe honey dew melon. The flavor is a marriage of sweet malty brown bread and herbal bitterness that lift the palate with hints of candied red apple and wild prairie flowers in the finish.
