complex little witbier here, done with ginger as the name suggests but also cardamom, coriander, and lemongrass, a way cool combination of flavors in this, real compatibly with an estery and spicy familiar belgian yeast strain and some grounding pale wheat malt, i think this is one of the better beers we had in here, and its one of the ones where the small batch size and very manual approach they have here is to its benefit. sunny pale beer with a low orange glow and just light haze, average white head from the tap, really striking nose with the earthy spicy almost juiced ginger and lemongrass coming on right away, followed by floral aromatic cardamom and coriander a ways back, toasted perhaps, nice with the dry wheat, the yeast is classic for this style, has a citrus and pear note as well as a trace of white pepper, some sweetness is here it seems, quite a lot going on but still light enough to seem summery and even refreshing. the flavor is peppy and spicy, the yeast really integrates the other elements, ginger, orange to me, light lemon too, lemon verbena, rosewater, coriander and green cardamom, white and black pepper, subtle anise, each little wrinkle has its moment but its also very cohesive, the wheat has a lightly toasted depth to it and stays central in the flavor. smooth texture from the wheat too but maybe a little more carbonation would be good, its not lazy or still i just really like this style to pop. even still, this brings together some unique elements effectively, drinks like a wit even with all thats happening in it, and is quite clever. really ambitious beers in this place, we had a great visit and some cool palate experiences with their beers, recommended!
