At 8.0% ABV and 77 IBU, it is both our highest ABV and highest IBU beer to date. The yeast is Vermont Tropics from Berkeley Labs - based on the yeast used in the famous Heady Topper NEIPA from Vermont. Hops are CTZ for bittering and Nectaron, Vista, and Sabro for the whirlpool and dry hopping (twice). A full 5 pounds of hops went into every barrel for this one. Nectaron is a brand new, hard to get hop from Australia that has rich pineapple, passionfruit and grapefruit aromas and flavors. Vista is a new hop from the U.S. that is known for its stonefruit, tangerine and tropical flavors. Sabro adds a touch of coconut to the mix.
