From the Carwyn Cellars "The One" subscription pack in March 2023. Drunk in October 2023.
L: A gusher in the glass that left significant amounts of beer on my tabletop after the initial pour. The beer that remained in the glass was a bright golden yellow (it became hazier after the beer left in the bottle made it into the glass), with loads of carbonation and a mountainous, bright-white head that maintained the rage quite some time after the pour. Lots of lacing left in the glass.
S: After I'd worked my way through the head to the extent I could put my nose in the glass, there were mild tones of wheaty grain and distinct tones of fermenting orchard fruits - apples and pears in particular.
T: The taste has a peppery backbone that sits under a layer of mild citrus, passionfruit and mandarin. Funk and tartness is dialed right back. Citric bitterness lingers after the swallow. There's a slightly thin finish, but it softens the fruit notes and doesn't detract. This is surprisingly fruity and tropical and lacks that vinous, yeasty overtone you often get in wild ales.
M: Carbonation and carbonic prickle sit somewhere around medium, but there's also a sherbety quality to the beer, especially on the swallow.
O: I'm not a fan of sours or wild ales as I'm not big on tartness in beers, but this one was really quite delicious and dialed right back on the funk, with the peppery note perhaps standing in for its absence, and I would have definitely gone back for a second if I had the option.
