Fitting somewhere between a Juicy IPA, a classic WCIPA and the new hazy WCIPA, our Ilk IPA fits nicely in the pocket of what we all are calling American IPA. Slightly hazy and firmly bitter, our IPA features Citra and Mosaic hops with a couple of rotating classic or modern IPA hops.

Poured into a Seattle Beer Week glass. Pours a 1/2 finger white head with great retention and nice lacing. Aroma of pale malt, citrus and dank hops, lemon, catty dankness and light stone fruit. Flavor is pale malt, dank and citrus hops, grapefruit, lemon, catty and lightly herbal dankness, vague mixed tropical fruit with no distinct fruit dominating, but overall pleasant profile; solid finishing citrus rind bitterness. Medium bodied with light to moderate creaminess. This struck me as mostly dank at first, but there is a light, but appealing mixed fruit character near the finish. I'm not sure I like the incursion of Mosaic hops into the West Cost style IPAs, but a light touch like this adds interest without overriding the other hops. On the dank end of the style, but nicely done. Apparently Ilk will be modifying this with other hops over time and I will definitely check back in.
