This pastry sour is far from silent, it screams boldly. This heavily-fruited sour is defined by a massive addition of 100 pounds of real fruit puree. This beer was rested on passion fruit, guava, and tangerine fruit purées. This treatment creates a "liquid sorbet" experience with a thick, smoothie-like mouthfeel. The fruit additions are highlighted by tropical fermentation characteristics and a firm tartness.
