Thick and pitch black in the glass with a couple fingers of short-lived cinnamon head, squiggly lacing. She's a looker.
The aroma is cocoa powder, red fruits, maple and umami that hints at a touch of smoke.
The flavor is pretty sweet and has an almost-smoky/charred character. Baker's chocolate, caramel sweetness and a weird oxidized/astringent umami-ish character that I don't personally care for at all.
This combined with some alcohol induced a little shudder after each sip. The beer is sweet and full-bodied and on the verge of sticky with fairly high carbonation.
I was and still am excited to see a simple, straightahead imperial stout. There are fewer and fewer and I'd argue that in Quebec there were barely any to begin with. Even at their peak of popularity (and even when including bad ones). However, there is something here that is the slightest bit out of whack. Part of it is my personal tastes, but there is also part that clashes with the style profile. Anyway, the pieces are all there and I'm hoping that this new brewery improves with practice.
* - With some time in the glass, approaching room temperature and with my senses slightly dulling, the harsh edges round off a bit but don't fully disappear. I imagine it'd be pretty rough at standard fridge temp considering what I detected at 48 degrees.
