Appearance. Pours a deep brown, close to black in the glass with a thin, light brown head.
Smell. Really smokey dark malts, some un-burned wood and just a bit of vanilla.
Taste. Those big smokey, roasty malts again, a little bit of salty pork rinds (probably wouldn't have picked up on this if I didn't read about the ingredients first), some dark coffee. Not bad at all, but not really getting any bourbon barrel.
Mouthfeel. Medium body with medium+ carbonation.
Overall. Nice smokey beer. Better to under-do the bourbon barrel than overdo it and with the body of this beer, I'm glad it was the first choice. I wonder if this one is still on the shelves...

A: Black/Brown and puts with a single finger of pale brown head, minimal re-tension.
S: Scent reminds me of the heavy smoke of a campfire, possibly a american oak barrel as well as hits of bacon meatiness and wet forrest floor.
T: Tastes of acrid coffee and smokey barrels and ends with meaty bacon and after taste of bitters.
M: Mouth feel is medium bodied and low in carbonation - it might just be the flavour but I keep trying to smack my lips to feel the bacon grease.
O: A smokey hit with bitter high notes and a chaser of piggy charcuterie. This isn't your easy drinking sipping beer - this is a glass of liquid appetizers, excellent paired with strong cheeses and rafts of sausage.

Poured from a 12oz bottle into a Dogfish Head Signature glass.
A: Deep dark brown in color with a very small amount of light slipping in through the sides of the glass. Aggressive pour leads to a one finger fizzy latte colored head that disappears pretty quickly.
S: Tons of toasted chocolate malts up front with other malts present as well. Not to mention a really up front bacon smell to go along with it. It literally smells like cocoa covered bacon. Delicious.
T: Wow...even better than the smell. The malts are huge and complex and give off a cocoa, bacon, malt, black cherry mixture with some smoke and oak mixed in for good measure.
M: Big thick creamy mouthfeel with plenty of carbonation. Big finish.
O: A really delicious beer. I went in a bit skeptical of the bacon seeing as I love bacon and I love beer...this one was delicious and I'm glad I had the opportunity to try it!
