Canyon Walls is a throwback to an old recipe made in our home brew days, inspired by the amber ales of the Pacific NorthWest. Brewed with a base of Rabbit Hill Malthouse 2-row, maris otter, caramel, and a dash of chocolate malt. Hopped in the kettle with cascade and chinook

Pours cloudy amber with orange hue; dirty white head, average retention with good initial lacing.
Nose is mostly malt forward; toffee with really nice toasty character; woody and lightly pine forward hop character, touch of dry pithy citrus.
Taste is very well balanced; good caramel malt presence with some toastiness, good hop presence on the finish; slight grapefruit, pleasant sticky piney bite; gets even better as it warms a bit.
Medium body; smooth carbonation, almost creamy; great combination of malty yet super drinkable due to the drying and sticky bitter finish; this is a highlight for me; stunningly perfect.

Bright copper-amber in color, it arrived in a clear pint glass after being drawn from a tap. There's almost no off-white head, as that's how beer is served in Philadelphia. It smells somewhat malty and somewhat hoppy, like a good Red should. The taste is delightfully less sweet than some in this style, yet it keeps a solid malt presence. The hops are just bitter enough to balance and expand the taste. Adding to the drinking pleasure, there's nicely stratified glass lacing for the eyes. The mouthfeel is a little thin, but well in line for this type. A dry finish might be its best accomplishment, saving the best for last.
