This beer's journey began with fabricating bourbon barrels, that previously held VT maple syrup, into upright open top fermentation vessels. They were used to ferment the Imperial Stout in 2022 with our house British Ale yeast.

After primary fermentation was complete, we then racked the beer into freshly dumped bourbon barrels and laid them rest for 18 months. After patiently waiting for the aging to be complete, we blended in an equal portion of the original Imperial Stout from 2022 that had been conditioned in entirely stainless steel to round out the blend.
