Fischer’s Braubär is a hefeweizen that utilizes a little bit of caramel malt in its production giving it a little more color, and a slightly sweeter and more flavorful maltiness. It’s amber in color beneath a rocky head of off-white foam. Hundreds of very tiny bubbles can be seen rising steadily towards the surface. The aroma is softer than many hefeweizens although the yeasty characteristics are still there, and some of the karamellmalz is noticeable as well. The flavor is slightly richer than you might expect but not by too much. The malt is doughy sweet, but bready, and even a little honeyish - I wonder if that’s where the bear comes in. Again, the banana and clove remain, and they’re more noticeable here, but the little bit of caramel does set it aside somewhat. It’s subtly acidic as well, which is usually the case with hefeweizens as the yeast that remains in the bottle is itself acidic. In the mouth it’s medium bodied and gently effervescent and spritzy. Overall I’ve found this to be one of my favorites. It’s got just a little bit of extra character that keeps you interested.
