Esters are chemical compounds that provide a ‘fruity’ aroma to beer.
In 1960, John E. Hodge reported for the first time a very specific type of ester: HDMF.
This compound is produced during brewing through the Maillard reaction (see our beer Bromium for more info on this reaction).
HDMF is the main contributor to the sweet aroma in mangoes.
We combined mango nectar with the tartaric acid in tamarind pulp to create a perfect balance of sweet, tangy, and sour.
A Berliner Weisse with mango as the element of focus makes the latest addition to our periodic table of beer.

This was a Christmas gift in 2023, drunk in June 2024.
L: Thick, mango juice dull orange. There's no head, and I can't see any carbonation in the glass. It looks like a glass of fruit juice.
S: There's quite a strong, creamy mango and peach aroma when I stick my nose far enough into the glass. As with pretty much all fruited sours, there's nothing beyond the aroma of the fruit addition other than the slight smell of acidity.
T: The main attraction of this one is definitely the sweet, lingering mango note. There's also a sweetness at the back end that duels with the rather mild acidity; that acidity might be the tamarind, but having never eaten one, I'm not sure how they taste! The mango hangs around long after the swallow and doubles down retronasally. To be honest, this tastes much more like a fruity cocktail than a beer, but it's very nice for what it is.
M: This one is thick and creamy in the mouth, with minimal carbonation. The lack of carbonation plays into the fruit juice vibe.
O: Despite an unattractive appearance and one-trick taste profile, this is a very enjoyable and refreshing sour that would be great on a hot day.
