Murky orange golden body, huge white head made up of tiny bubbles that dies down quickly, with visible carbonation. Smells of champagne yeast, white grape, apple, flowers and a hint of honeydew. Taste has great champagne yeast and apple with skins up front, lemon, flowers and big white grape the next wave, with finishing buttery pear and a whisper of honeycomb. Feel has a very high carbonation level, light, effervescent, wet in a fruity way before somewhat dry and lightly pungent smooth soft yeast. Great for that special occasion or french dinner. The wife loved it

exotic find at a killer beer bar in vegas recently, never seen or heard of this, its french, there isnt a ton of info, and it looks like the only beer they make. i think it sort of plays in that deus space, high end, champagne method with disgorgement and all, super spendy, but im not sure this one is quite as compelling. still, something really fun and different to splurge on and share with the boys! a shade darker in color than expected, gold to brass, and not as well refined looking as the sexy champagne packaging sort of sells it on being, a very light haze to it and a high rising initial head but then a fast settling and less carbonation than their should be staying in suspension, not as bubbly and regal to drink on as i hoped, but i like whats in the glass anyway, light funk to it, a wine yeast character to me, warm alcohol, low tones of dried apricot, golden raisin, butterscotch, and cognac, light honey sweetness in the nose but drier in the flavor, yellow florals, subtle almost perfume botanicals even, white wine and sauternes, white cranberry, faint tang to it as well, yeasty in a unique way, and with some significant alcohol and more and more body as it warms. it feels almost flat for what it is, had higher hopes for the mouthfeel for sure, and the whole thing seems faded a bit, tired even, like its old but it isnt, some oxidation, some paper character, like too old white wine of medium quality. i think this has a lot going for it, and i have no doubt the intent and the process are special, but i dont think this is quite good enough to cost what it does, and by the end of the glass i am finding myself definitely ready to move on to something else. fun effort and something different for sure, but i need high refinement, darn near technical perfection from this style, and that is lacking for me with this...
