With all the pastry flavors swirling around the stout scene, Trellis Brewing turns from the thickness and embraces a more somber side of roast while gently aging it in bourbon barrels for extra sweetness and spice.
Pouring a dark, and not quite black, shade of brown, Beelzebubble struggles to build a froth but its sultry scent of light roast coffee, chocolate, caramel and barrel influence radiates with a robuster perfume upon the nose. Expectedly sweet, the malty upstart of brown sugar, molasses, toffee and chocolate splash the palate with sugary weight. The rebuttal of coffee-type roast is smooth and rounded with toasty, nutty and light licorice character. A low lying bitterness reinforces the roast in its broad and woody bite, but its the barrel and it's caramel, vanilla and oaken nuances that round out the taste.
Full bodied but relaxed on the palate, the imperial stout is a soothing, sweeter and less roasty version of imperial stout.
