An experimental beer. We skipped a boil in the brewing process to allow us to keep the proteins we typically lose, which gives this beer more body and flavor.

16 fl. oz. can (crowler), filled on 12/26/25 and consumed almost immediately
Notes via stream of consciousness: This is a doppelbock at 6.0% ABV brewed with a "unique hybrid yeast", and if I'm not mistaken it's a "no-boil beer". It's a clear dark mahogany brown beneath a creamy head of khaki colored foam. When held to the light you can see glowing ruby and orange highlights at the base of the glass. In the nose I'm getting chocolate cake, chocolate fudge, dark German bread, and a hint of cocoa powder. The taste is not nearly as sweet nor chocolatey as the aroma lets on, which is good. It has a great aroma, but then a more traditional doppelbock flavor. It's malty, rich, chocolatey, subtly roasty, and slightly grassy and herbal. A moderate bitterness balances it nicely and it finishes mainly dry with some residual chocolate lingering. In the mouth it's full-medium in body and smooth across the palate. The head held up well but the lacing could have been better. All in all it's a great example of the doppelbock style.
