I had this in a little 2000-2005 vertical sampler of Bare Tree, courtesy of my friend Adam from Chi-town.
The same hazed, tawny gold, this one topped with a giant mountain of foam sticking out of the glass. Opened with a loud pop. This particular bottle seems to be ultra carbonated, proabably due to the half inch of sediment in the bottom of the bottle. Full, malty aroma, thick with honey. Limp apple and banana fruit, with slight clovey phenols. The flavor starts with thick, rich wheaty malt, slathered with honey and caramel. Mild appley flavor, moving sluggishly into a softly clovy, dwindling finish. Lingering sweetness, with a bit of booze and no hop presence. Probably a year or so past its prime. This stuff is great (assuming the same recipe) a year younger. Nice fruitiness and phenols, but it's better the younger it is.
I might have drank a "bad" bottle, with an excessive amount of carbonation, but i suspect the wheat wine style doesn't age terribly well due to the large amounts of wheat. Not bad by any means, but I'd prefer this fresh, with all the strings in the symphony.
