"The Void" is our farmhouse saison: 100% foeder fermented with our house cultures containing multiple strains of s. cerevisiae, brettanomyces, and lactobacillus. Dry, effervescent, and mildly funky.

Bright saturated straw gold, a finger of foam that audibly crackles as it settles to a skim.
Oaky vanilla, wet wood, preserved lemon, citrus zest, old books.
Lemon curd, dried pineapple, oaky vanilla, crisp but mellow acidity. Light carb level, could use more effervescence. Acidity level light to moderate, tart but not approaching sour.
Well balanced, a nice mixed-ferm saison.
