Hircus is a dark malt bock that is produced in traditional open fermentation using our own well water. Five precious malts from Weyermann and three prehistoric German hops give the beer its special aroma. Distinct malt, chocolate and caramel notes characterize this brew and are distinguished by an elegant and creamy finish.

Purchased in Nov 2021 from Carwyn Cellars in Melbourne, Australia. Drunk in October 2022. The longest I've ever had a beer in my fridge... (soon to be overtaken - sometimes life and other beers get in the way...).
L: Dark brown, tending to ruby red on the edges and bottom of the glass. Opaque. Significant, small-bubbled carbonation is evident. There's a creamy-looking, off-white head.
S: Tangy caramel, cola and alcohol. Increasing umami/soy notes as it warms.
T: Caramel and rich toffee. Cola and raspberry. Roasty raisin toast. All backed up with a lovely, sweet finish. There's a little bit of warming on the way down but it hides its alcohol relatively well. As with the nose, it gains an umami/soy note as it warms, but also sees increasing intensity in the caramel and toffee notes.
M: Mmmmm.... silky. This one coats the mouth in a lush, creamy, low-carbonation, velvet-like blanket. Sublime.
O: An excellent beer. It's sweet, roasty, bitter and smooth all in one breath, giving the beer a complexity - especially as it warms - that behoves quiet contemplation. Its warming, caramel-malt body conjures autumnal visions of cooling nights, yellowing leaves and the first hints of woodsmoke as the coming winter nudges its clammy head above the horizon. What a fantastic beer this would be in that context!
Cheers!

i only know these guys for their kolsch so i was over the moon to encounter this one in the wild and on tap, a big dark sturdy bock that seems both very traditional to me and right on for an ugly winter day. its really deep in color, the richest brown, and holds an inch of tan head too, looks nice in proper glassware and smells complex, roasty and umami, a little soy, brown sugar, an wet wood, like a good marinade to me, still obviously german, really layered and bigger, some alcohol pushing through the sugar. there is very much a cola or even sarsaparilla vibe to this, cherry cordial, wet oak, soy again, molasses, maple, and toffee, bready and with some obviously german lager yeast coming through it all, really makes this for me and i would miss it if it were more subtle. this really is quite filling, lots of body and even though it has enough carbonation it still just has a ton of weight to it, and it warming up a little only adds to that. not sure how many of these i could drink by the half liter, but thats the style in general for me i guess. a fine example of it here, and a heck of a contrast to their more well known kolsch. perfect beer for today, a cold, wet, and yucky december afternoon!

Still brewed
A cola beer if ever there was one, it does it well enough unlike some Belgian beers that are similar.

O:
Sünner describes this new offering as a Bock-style Beer, but doesn't mention if they used their Kölsch Yeast or a Lager Yeast.
It reminded me a bit more of an Altbier Sticke from neighboring Düsseldorf than a Dunkler Bock.
What is certain though is that this is a fantastic new offering that surprised the hell out of me.
