This sour blond ale is aged with a mix of yeast and bacteria (Lactobacillus, Pediococcus, Saccharomyces, and Brettanomyces) in neutral French oak barrels and then has organic Masumoto family farm nectarines added at about 2 lbs. per gallon. This beer brings a nice barnyard funkiness to balance the juice nectarine fruit.

A 1 pint 0.9 fl. oz. bottle, batch 3. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy straw yellow colour with a one finger white head that dissipated quickly and left only sparse to no lacing.
Aroma: Lightly tart, juicy nectarines, peach, apricot, stone fruit, light funk and a tinge of citrus.
Taste: Lightly sour, tart, nectarines, peach, apricot, unripe mango, stone fruit, and lemon with only a hint of oak and funk.
Mouthfeel: Light bodied with moderate carbonation.
Overall: Nice stone fruit aroma and flavours that are both tasty and balanced.

Poured from a 500ml bottle, Batch 2, a clear pale yellow under a 1/4" white head which fades to the rim and leaves spotty lace. Aroma is fruity, yeasty, funky, with some oak notes. Flavor is tart, clean nectarine, Brett funk and some hay/grassy notes. Light body and light carbonation. Refreshing fruity tart-filled funky finish. Solid.

500ml bottle, batch 2. Served in a snifter glass. Pours a bright lemon yellow body, clear with one finger white head that is short lived, no lacing either. Smell is lactic acid, vinegar, fair bit of lemon, slight burnt grain, touch of sweet sugar. It smells fairly acetic. Flavour is a bit one-dimensional, mostly lactic acid and vinegar, with a slight bit of stone fruit and lemon. Not particularly complex, but fits the wild ale mold. Mouthfeel is lighter bodied, dry and refreshing, slight burnt rubber on the backend, but not in a particularly offensive way.
