Cold Box Cool Ship is 100% spontaneously fermented in Highland Park. A very simple base recipe of barley, unmalted wheat, and aged German Hallertau hops allow the microflora to really stand out. We let the beer cool down in the open air overnight, getting inoculated with wild yeast and bacteria. We then let it ferment and age in neutral oak barrels for around a year. This all develops into something that is completely unique to our neighborhood. The beer has lean, pronounced grapefruit acidity with a delicate, raw mustiness as a nice counterbalance.

Clear yellow/orange.
Barn yard funk 100%.
Not has aggressive as the nose. Could tolerate more astringency or sour. That said, still enjoyed peppery notes and and the mild side of tart.
More carbonation would be welcome.

Appearance: Arrives clear and golden colored with a modest head that leaves some spots of lacing
Smell: Funky, with a rustic lemon aroma; grapefruit pith, as well
Taste: Tart lemon flavors forward with a rustic character building; grapefruit pith, in the mid-palate; tart, after the swallow, with a dry finish
Mouthfeel: Medium body with moderate carbonation
Overall: Enjoyed the impact of the local wild yeast on this beer; nice and funky

Poured into a 3 Floyds teku. Cloudy urine color with decent carb. Nose is sour fruit, mostly nectarine. Palate follows suit. A decent effort as an AWA, but less funk and complexity than I would have hoped for a spontaneously fermented beer, and for that reason a bit disappointing. That notwithstanding, sour beer fans won't find much to complain about, and it's not overly acidic.
