Collective Blend is our Blended Barrel-Aged Sour. This beer incorporates French Oak puncheons previously used in the Central coast of California for wines with Rhône type of varietals (such as Syrah or Grenache). Expect the grapefruit & funk character to be out front with subtle wet wood & citrus peel bitterness.

375ml capped bottle, tulip glass. Cloudy hazy pale straw yellow body, one and half finger frothy white head, good retention, medium collar, touch of lacing. Smell is lemon peel, grapefruit fruit sweetness, moderate acetic acidity, light resinous grapefruit from the hops, a bit of oak, light funky hay, a bit of green apple from the acetone. Flavour is pretty close to the nose, but comes together nicely- light cheese, moderate acetic acidity, grapefruity hop aromatics, a bit of floral, oak, mildly lactic but overall not overbearingly acidic. A bit of sweet caramel and green apple, acetone. Really nice and complex wild ale profile. Medium body, good carbonation, refreshingly tart and a bit of damp hay and acetone on the finish.
