Collaboration with Cellador Ales
Brewed in collaboration with our friends from Cellador Ales, Pasts is a golden sour ale utilizing both oats and buckwheat. The gallberry honey is sourced locally from Bennett’s Honey Farm. The beer spent 11 months in French oak barrels that previous held Rhone varietal red wine. We took a portion of the brew and gave it a little time to age on some apricots.

Draft at HPB. Stemmed glass. Hazy, unfiltered golden orange body, one finger white head, good retention, not much lacing. Big apricot, moderate acetic acidity, slight grain, oak, honey sweetness, stone fruit. Flavour is a massive apricot sour patch kid flavour, the apricot and acetic acidity hits you right in the feels without being overly acetic. Really nice. A bit of oak, vinous character as well. Mouthfeel is lighter medium bodied, good carbonation, big acetic bite lingers towards the end, but again not straight vinegar but more of a big acetic and stonefruit tartness combination. This is pretty awesome, I think I may like this better than Lazy Susan.
