We’ve teamed up with our Cellarmaker buddies on a number of fresh and hoppy beers in the past, but it felt like it was time to go bigger (especially considering how they just keep winning Toronado Barleywine Fest). We worked with Connor and Tim on creating a recipe, inspired some of their malt choices, but we used an all Admiral Maltings malt bill that fit the flavor profiles of some choices Cellarmaker makes, to make a California Barleywine (with all California grown malt). We then took what we learned and brewed another Barleywine about 6 months later that took heavy inspiration from what we learned from our first brew with Cellarmaker, this time using more common English malts (as well as a small portion of German malt). For the third component of this blend, for even more depth, we added one of our oldest barrels still in the cellar, an extended aged barrel of the recipe that was blended in Endless Tomorrows.
Toffee and caramel with a touch of spirit, chocolate and coffee. Balanced sweetness with a drier finish to keep sweetness even more in check.
The Dream Sleep blend consists of the following components:
Barleywine aged in an Applewood stave bourbon barrel for 10 months
Barleywine aged in a Woodinville bourbon barrel for 30 months
Barleywine aged in a Bardstown bourbon barrel for 15 months
Toffee and caramel with a touch of spirit, chocolate and coffee. Balanced sweetness with a drier finish to keep sweetness even more in check.

P deep slightly murky chestnut w/ a touch of burgundy translucency at the bottom of the glass; tiny khaki colored cap
N med-bold nose of sweet, inviting caramel and bread pudding-like character; mouthwatering
T sticky toffee, caramel, and sweet bread/ bread pudding-like character; finishes with dark sugars, barrel, and booze, w/ plenty of warming heat; smooth vanilla throughout; excellent profile
Mf med to med-full bodied w/ soft-med to med carb; sticky finish; smooth
O big, bold, sweet, and absolutely delicious; outstanding stuff!

Poured at fridge temp. Pours very dark brown with almost no head. The nose is amazing. Vanilla, toffee, bourbon, raisins, oak, slight maple, and molasses.
The taste is also incredible. Toffee dominates, which I'm quite happy with. Bourbon (not too boozy), vanilla, molasses, maple, dried fruit, and light smoke. Dang these barrels helped create an insane barleywine. This collab was super impressive.
Mouthfeel is medium to full bodied. Great toffee aftertaste. Love it!
